Pear and Mango Chutney


Ingredients:

250 gms. raw firm mango

250 gms. pears.

500 gms. sugar

2 tsp. salt

1 tsp. red chilli powder

1 tsp. garam masala

1 tbsp. marshmelon (kharbooja) seeds.

1 tbsp. raisins.

2 cloves powdered

8 each almonds and cashews chopped finely.

Method:

Peel and mash and pear.

Put 1 tbsp. sugar in a heavy saucepan.

Heat on a low flame, stirring and cooking till it turns brown.

Add 500 ml. water and boil.

When the sugar has fully dissolved in the water add remaining sugar.

When it begins to boil again add the mashed fruit, cashew, raisins, seeds, chilli and salt.

Boil till a thick jam consistency is obtained. Stir occasionally.

Add the clove powder and garam masala.

Cool a bit and transfer to clean airtight jar.

Making time: 1 hour

Shelf life: 1 month

Makes 1.5 kgs. chutney.

Vegetable rice


Ingredients:

Basmati rice - 2 cups
Water - 3 cups
Ginger garlic paste - 3 tsp
Green chillies - 5
Onion - 1 lengthwise chopped
Tomato - 1 finely chopped
Cinnamon - 1 inch stick
Cardamom - 2
Clove - 2

Method:-

Heat the pressure cooker with ghee.
Then add cashew nuts, cinnamon, cardamom, clove and bay leaf.

Sauté for few mins.
Then add onions. Fry for few mins.

Next add tomatoes, ginger garlic paste and green chillies.
Sauté until the raw smell disappears.
Then add carrots, beans and peas.
Combine well.

Then add rice, coconut milk, water, coriander leaves and mint leaves.
Close the pressure cooker.
Now pressure cook for 2 whistles and switch off the stove.

Now your mixed vegetable rice is ready.
Serve hot with onion raitha.

FRUIT FUN

Ingredients:

100 gms Apple (Sabe)
75 gms Guavas (Amrood)
70 gms Grapes (Angoor)
1 Sweet lime (Mosambi) / Orange
50 gms Cottage Cheese (Paneer) (made from skimmed milk)
1 small bunch Mint Leaves (Pudina Leaves)
1 tblsp Lime or Lemon Juice (Nimbu)
Salt and Pepper To Taste

Method:

Clean and wash mint leaves.
Grind the mint leaves with lemon juice, salt and pepper.
Cut paneer into small cubes and dress it with mint paste.
Keep aside.
Peel, clean and segment the orange.
Clean and wash grapes.
Wash guava and apple and cut into small cubes.
Mix the fruits and paneer together.
Serve chilled.

MASALA NOODLES

Ingredients:

1 packet Noodles
2 Onion (Pyaj)
3 - 4 chopped Tomato (Tamatar)
4 tsp chopped Coriander Leaves (Dhania Patta)
1 " chopped Ginger (Adrak)
3 - 4 flakes chopped Garlic (Lasun)
4 5 chopped Green chilli (Hari mirch)
1/2 tsp Red chili pepper (Lal Mirchi)
1/2 tsp Garam Masala Powder
1 tblsp Oil

Method:-

Boil the noodles as directed on the pack.
Drain them in a strainer and wash with cold water. Keep aside.
Heat oil in a nonstick pan and fry garlic, ginger, green chillies and onions until they are golden.
Add tomatoes along with salt and masala.
Cook till tomatoes are tender.
Add the noodles and stir well.
Cook for a while and remove the fire and serve immediately.

NORMAL OR NUTS?

Are you afraid of heights? Can't stop shopping? Are You Normal or Nuts? Are you too shy? Do you cry too much? Do you cry too little? Do you pull your hair? Or other people's hair? Are you afraid of lizards? Or water tanks?

Of course, all quirks are not cute. It's difficult to know whether the behavior is harmless . The line between silly and serious is very thin.

If you are afraid to go to high places, like tall bridges or even the balcony at church. And it's not because you afraid you will fall -- it's because you afraid that you will jump! you don't want to kill yourself, but you want to experience that sense of flying or floating. Of course, you know you can go splat and die, so the desire to jump terrifies you. What do you do?

Hey make skydiving a goal? It's a unique experience, You actually experience the flying that you're seeking.

Fear of heights is very common in people. And mostly people are more afraid of jumping as they fall. For most fears, the treatment is exposure to what you fear of. Try to visit high places, and feel that your are safe and relaxed. Take your friend to the third-floor balcony. Stay there until you feel safe and relaxed. Then try next floors, then the terrace. If you do well , you can develop confidence for a sky driving too. Lastly it will help you to stop worrying about your impulse to jump.

To be human is to be quirky. If you think there's some group of perfect, "normal" people out there, I've got a glacier in the Arctic I'd like to say you. Even I was afraid of heights and never use to go in balcony as my house is in third floor, but after reading this article i tried and it works too. Wheat-Moong Khichdi


Ingredients:

1 cup whole soft wheat
1 cup whole moong
1 tbsp. ghee
salt to taste

Method:

Soak whole wheat and moong separately for 1 hour.
Drain wheat and moong in separate colanders, till all water is removed.
Keep moong aside till required.
Pound in a mortar and pestle till wheat is broken coarsely. Or run in a small mixie in very short spurts, till broken.
Take care not to make it too fine, or the khichidi will be pasty.
Put an unlidded pressure cooker to heat.
Add ghee, melt and add moong beans.
Stir and fry for 2 minutes.
Add 5 cup boiling hot water.
When boiling resumes, add broken wheat.
Add salt, stir again till boiling resumes.
Cover pressure cooker lid, and allow to cook for 3 whistles.
Cool, and remove lid.
Stir, and resume cooking further for 5-7 minutes.
The grains should be mashed easily when pressed with thumb and finger.
Cook further till the texture of the khichidi is like a thick porridge.
Cover and keep aside for 10 minutes for flavours to blend.
If desired drizzle a tbsp. of ghee, to add a delightful aroma.
Serve piping hot, with curds, sugar, or milk or even as is.

Making time: 45 minutes

Makes: 3 servings

Shelflife: Best fresh 1 day if cold with buttermilk.

Pumpkin Soup




Ingredients:


1, 200 gm. Slice of yellow pumpkin
1, 200 gm. Slice of white pumpkin
1 sprig dill leaves, finely chopped
1/2 cup cream
1 tsp. sugar
1/2 tsp. pepper freshly milled
salt to taste
1/2 tsp. butter
Dill or mint to garnish

Method:

Peel and chop both pumpkins together.
Pressure cook with 1 cup water till soft.
Blend with an electric handblender.
Pass through a sieve, add 1 cup water.
Put in a deep vessel, bring to boil.
Simmer for 2-3 minutes, reduce heat.
Add salt, pepper, buter, sugar, dill leaves.Stir take off fire.
Add half fresh cream, stir till well blended.
Serve hot.
Add a swirl of cream in individual serving bowls, after pouring hot soup.
Garnish with a teeny bit of dill or mint herb.

Making time: 20 minutes

Makes: 3 servings
