Pumpkin Soup




Ingredients:


1, 200 gm. Slice of yellow pumpkin
1, 200 gm. Slice of white pumpkin
1 sprig dill leaves, finely chopped
1/2 cup cream
1 tsp. sugar
1/2 tsp. pepper freshly milled
salt to taste
1/2 tsp. butter
Dill or mint to garnish

Method:

Peel and chop both pumpkins together.
Pressure cook with 1 cup water till soft.
Blend with an electric handblender.
Pass through a sieve, add 1 cup water.
Put in a deep vessel, bring to boil.
Simmer for 2-3 minutes, reduce heat.
Add salt, pepper, buter, sugar, dill leaves.Stir take off fire.
Add half fresh cream, stir till well blended.
Serve hot.
Add a swirl of cream in individual serving bowls, after pouring hot soup.
Garnish with a teeny bit of dill or mint herb.

Making time: 20 minutes

Makes: 3 servings

Cheese Broccoli Soup

Today i am giving you favorite recipe called cheese broccoli soup. Here it is as follows:

Ingredients:


2 cups broccoli florets
1 onion sliced
1 3” piece bottle gourd, peeled, chopped
15-20 mint leaves for garnish
4 tbsp. Cream cheese
1 tbsp. Fresh curds
1 tsp. butter
4 cups vegetable stock
salt to taste
pepper to taste

Method:

Melt butter in a pan, add onions, stirfry till transparent.
Add broccoli, bottle gourd, stirfry further, till soft.
Add half stock, simmer for 15 minutes, covered.
Cool, add curds,blend in mixer till smooth, strain.
Add remaining stock, heat again.
Do not bring to a boil, stir in cream cheese till fully melted.
Add salt and pepper to taste, garnish with mint leaves.
Serve hot, with green chilli sauce and soup sticks.

Cream of almond soup

Ingredients:-

Almonds 150-200gms
Milk 3cups
Fresh cream for garnishing
Vegetable stalk 4cups
White sauce 2cups
Salt to taste
Pepper to taste


Method:-

Grind almond to a paste with one cup of milk.
Mix the stalk, white sauce together and keep aside.
Boil two cups of milk and add the prepared almond paste.
Cook till done.
Mix the prepared cooked almond to the vegetable stalk and white sauce.
Add salt and pepper.
Boil till required consistency.


Ingredients for white sauce:-

Butter 100gms
Maida 2tsp
Milk 4 cups

Method:-

Melt butter in thick bottomed vessel.
Fry maida.Add milk and keep stirring till required consistency.
